because kai are magic creatures like himself, maybe? i think the real issue is that magic doesn't work right with buu, not just kai stuff. otherwise, why didn't bibidi or babidi just possess him?
list of canon sources:

the DB manga, and the Dr. Slump manga as it applies to the crossover during the rra saga.

list of non canon sources:

everything else, regardless of origin, format, or quality.

for those that blindly follow word of god

I'm positive that the Kais have powers of their own unrelated to any other kind of power. It explains why Kaioshin was able to bind SSjin 2 Teen Gohan. So it is perhaps the mixture of a Kai's energy with the magic of Bibidi that somehow creates an explosive mixture of power. But beyond that, I wouldn't know how to explain it.

I'd actually amount it to this IMO: Buu takes on the traits of the absorbed kais. So when he absorbs south kai he gains muscle and amazing strength as that is south kai's main trait. While Daikaioshin was good natured and pure, so Buu took on the innocent and childish persona. As a result he can only harness his true power when he is totally enraged and as such I treat fat buu as slowly unlocking his true power when he got mad against Goku.

But the South Supreme Kai was supposed to be good to. After absorbing the South Supreme Kai Kid Buu became stronger. Maybe it was just the fact that Daikaioshin was SO pure that he actually suppressed Kid Buu's power, like you said. Whereas South Kaioshin was good to, like Gotenks and Piccolo, he and they weren't so pure-hearted and good as to suppress Buu's power. I think I understand that bit now.
